Swirled with bright, bold colors, this cake is totally cosmic. It’s our easy-to-make take on the colorful galaxy donut trend. The good news is there’s no piping needed for an out-of-this-world cake made right at home. For the cake, make one Double Chocolate Pound Cake but bake the pound cake in a 9-inch round pan rather than the traditional loaf pan. I used pound cake for this project because it is a denser cake which makes it less susceptible to breaking when it is flipped and handled to create the galaxy icing effect. Plus, pound cake is always delicious with a simple glaze icing. The consistency of the icing is key for the success of this cake; it should have the consistency of white school glue. If the icing seems too thick, add more milk, one teaspoon at a time, mixing after each addition to test the consistency. If icing seems too thin, add more powdered sugar, one tablespoon at a time, mixing after each addition until the right constancy is reached. Divide prepared icing into five separate bowls. Use the flat side of a wooden skewer to swirl colors together slightly. 5. Turn cake clockwise 360 degrees in the pan so colors swirl on top of cake. Place a plate on top of the pan and flip the cake over. Wait 1 to 2 minutes before lifting the pan off as icing moves slowly. If you pull the cake out too quickly, it may not be fully covered. Sprinkle with silver sprinkles and pearl dust if desired. Let the cake set for about an hour until the icing hardens before serving.
